Owners of the Winery of Ellicottville Open Black Flower Wines & Provisions in Hamburg

The village of Hamburg recently welcomed its newest addition to the wine scene with the opening of Black Flower Wine & Provisions at 8 S. Buffalo Street. Occupying the former 10,000 Vines Winery space, the husband/wife team behind the Winery of Ellicottville, Sam and Beth Sheehy, purchased the building from the former owner, Michael Ditonto, and spent the better part of a year remodeling. Black Flower Wine & Provisions officially opened for business on December 6, 2025 and has been serving the community ever since. ellicottvilleNOW caught up with Sam for comments.

“Mike wanted to retire, and he wanted to keep the space as a wine location in Hamburg,” Sheehy said by way of phone interview. “Beth and I purchased it from him, and we remodeled it over the past year. We’ve got an all-new tasting bar, displays, and a small kitchen,” he said. “You can come in for tastings, [wine] flights, wines by the glass, of course, and bottle sales.”

As for the grand remodel, Sam explained that the couple put in conference ceilings, walnut display cabinets, a new black walnut bar, banquet seating, and new flooring. And that’s not all. The addition of the small kitchen allows for small plates and, yes, provisions. Think charcuterie, flat bread pizzas, and desserts. “We’re snacks; we’re not dinner,” Sheehy said. Regardless, Black Flower Wine & Provisions is the perfect jumping off point for a night out in the village, which Sheehy explained is loaded with businesses. “Even just coming to the area, there are tons of options,” he said, noting that the ample free parking around his winery is yet another draw.

“In Hamburg, we’re more depending on the local traffic, so we’re a place for the community to gather and sit down,” said Sam. “It’s a little higher end and we do offer some food. Also, we have distinct labels and varietals for the location.”

The new year looks bright for Black Flower Wine & Provisions. Sheehy said there is a Wine Club event on the books in January, followed by a Valentine’s Day pairing in February. Manager Sheron Mancuso, who runs the tasting bar and oversees building operations, also promotes the programming by way of an email newsletter and on social media. According to Sheehy, the best way to stay on top of new events is to sign up for the newsletter on the website and to follow the winery on Facebook and Instagram. Sheehy, meanwhile, continues to make wine from grapes sourced from different growers along Lake Erie - from Niagara County all the way down to northwestern Pennsylvania.

“I am very excited to be open and to share our new space with guests,” Mancuso added. “Personally, I am looking forward to helping guests find their new favorite wine or explore something new. I am looking forward to creating experiences and Black Flower becoming a place guests can come and unwind, relax and have a good time. That’s what my biggest takeaway is so far - it's that people want to be welcomed in; they are looking for a space that's both relaxing and fun, and us behind the bar sharing our knowledge, stories and glimpses into our life with them keeps them coming back.”

“Currently, we’re doing Riesling, Pinot Noir, Diamond,” he said. “We have a bunch of sparkling varietals - a Moscato, a Prosecco called Hello Gorgeous, a Blueberry Lemonade. We’re growing out the list as soon as we get going.”

The red wines are currently being sourced from the Winery of Ellicottville’s Pinot Noir and Cabernet, as well as the old 10,000 Vines Buffalo Red as the couple waits for the new wines to be bottled.

When asked if the wine bar will offer a wine of the month club, Sheehy said not yet, but remains optimistic. “We’re just getting our feet under us and will see how it goes. We are trying to get some people in the door. It’s a great little community - the village is right there, so we’re hoping a lot of customers come in and visit and make it their regular stop,” he said. “We’re just super excited to open the space up to the community and let people enjoy our wines.”
