Greater Olean Hospitality Committee Honors Sprague and Caya Families for Lasting Impact

From maple-sweetened meals to iconic local dining, the Sprague and Caya families will be honored for decades of dedication to the Greater Olean hospitality community.


OLEAN - The Greater Olean Hospitality Committee is excited to announce the latest inductees to the Hospitality Sculpture, a tribute to outstanding contributors to the local foodservice and hospitality industries. On Thursday, August 14th, at 5:30pm, a special ceremony will take place at Lincoln Park in downtown Olean to honor the exceptional efforts of Randy and Toni Sprague of Sprague’s Maple Farms, and Francis “Hoppy” and Janice Caya (posthumously), known for their decades-long impact on the community with Red’s and Trudy’s Restaurant.

The Hospitality Sculpture, unveiled in October 2023, serves to recognize individuals and businesses that have made a significant and lasting impact on the region’s foodservice and hospitality scene, through innovation, dedication, and an unwavering commitment to excellence.



Randy and Toni Sprague: A Legacy of Flavor and Community: Randy and Toni Sprague’s vision for a one-of-a-kind dining experience began with the opening of Sprague’s Maple Farms in Portville, NY in 2001. Over nearly 25 years, they have built a New York State maple wonderland, where guests not only enjoy an unforgettable meal, but an adventure in both flavor and atmosphere.

Sprague’s is renowned for its signature breakfasts available all day, hearty lunches, and premium dinners, all featuring one special ingredient - maple syrup. The couple’s passion for their craft extends beyond just the restaurant, as they operate a full maple syrup production facility, and maintain about 25,000 taps to produce 100% pure maple syrup, an essential ingredient in their menu offerings.

Joe Marra, committee member, commented, “Randy and Toni have turned their dream into a thriving business that reflects not only their skill and dedication, but their love for the community. What they've done for local agriculture and the hospitality scene is truly remarkable.”

Additionally, their restaurant provides family-friendly, year-round events such as Maple in the Mountains, Breakfast with Santa, and an Annual Easter Egg Hunt, drawing visitors from across the region and adding to the town's sense of community. Through their work, they have employed approximately 90 people annually and have formed lasting relationships with both employees and customers.

Francis "Hoppy" and Janice Caya - Pillars of Olean's Hospitality Heritage: Longtime Portville residents, Francis “Hoppy” and Janice Caya, built a legacy with Red’s and Trudy’s Restaurant, which they purchased in 1959. Known for its famous loose meat burger and homemade chili, Red’s became a beloved staple of the Olean/Portville community. The Cayas’ hands-on approach, commitment to quality, and dedication to their customers transformed Red’s into an iconic establishment in the region.

Joe Marra reflected, “Hoppy and Jan’s dedication to their family, their employees, and their community was evident in everything they did. Their philosophy was simple, yet powerful: treat everyone with respect, and build lasting relationships. Their impact is felt by so many of us who grew up with their hospitality.”

Beyond Red's, Hoppy’s entrepreneurial spirit led him to open Hop’s BBQ and later expand the family business to include a mini-golf course and game room at the Toll Gate building. However, it was his dedication to his community that truly set him apart. Hoppy and Jan’s contributions to local organizations like the Portville Fire Department, Portville Youth Football, and the American Legion are just a few examples of their commitment to giving back.

In recognition of their service, the Cayas have been honored for their contributions to local youth sports, churches, and community organizations. They were known for their generosity and for always putting others first.
